Mexican Sardine Salad Stuffed Avocados

Ingredients

  • 1 container Season Skinless & Boneless Sardines in Water, No Salt Added (4.25 oz.), drained and rinsed
  • 2 large avocados, halved and pit removed
  • 1 bell pepper, finely diced
  • 1 roma tomato, finely diced
  • ⅓ cup frozen corn
  • 1 green onion, diced
  • ½ lime, juiced
  • 1 Tbsp. olive oil
  • ¼ tsp. cayenne powder
  • ½ tsp. chili powder
  • ½ tsp. cumin
  • 1 tsp. garlic powder

Instructions

  • Mash the sardines with a fork. Mix together the rest of the ingredients besides the avocado.
  • Stuff the salad in the avocado. There will be extra salad that can’t fit into the avocado so you can serve it on the side.
