Ingredients
- 1 can Season Skinless & Boneless Fillets of Mackerel in Olive Oil (4.375 oz.)
- 2 cups cooked farro
- 3 Tbsp sherry vinegar
- 2 Tbsp lemon juice
- 1 tsp honey
- 1 Tbsp chopped shallot
- 1 garlic clove
- ½ cup fresh parsley, chopped
- ¼ cup toasted pine nuts
- ¼ cup golden raisins
- ⅓ cup green olives, sliced
Instructions
- In a large bowl whisk together sherry vinegar, lemon juice, honey, shallot, and garlic clove. Add farro and toss well to combine. Stir in parsley, pine nuts, raisins, and olives.
- Add mackerel and oil from can to the farro and gently mix. Taste for seasoning and add salt and pepper to taste.
